Saffron has long been prized in culinary, medicinal, and cultural traditions for its vibrant red threads, distinctive aroma, and numerous health benefits. However, its high value also makes it a prime target for adulteration.

Today, there are a lot of low-quality or fake saffron products flooding the market, making it hard for customers to tell which one is real. In this guide, we’ll explore how to tell original saffron from fake, the different types of adulteration, and expert tips to ensure you always get the real deal.

1. Why Saffron Is Expensive and Easily Changed Due to its labor intensive production, saffron can cost anywhere from $5,000 to $10,000 per kilogram. The stigma of the Crocus sativus flower is where it comes from. Each flower produces only three delicate threads, and harvesting is done entirely by hand.


One pound of saffron can be produced by consuming approximately 75,000 flowers. In order to boost profits, dishonest sellers frequently combine genuine saffron with dyed fibers, corn silk, dried marigold petals, or even synthetic threads.


2.Common Fake Saffron Types It is essential to be aware of the various forms of adulteration that may occur before learning how to test saffron: Dyed Fibers: Fibers made of cotton, corn silk, or horse hair that have been dyed red to look like saffron.

Safflower petals are a less expensive flower that has a similar color but a distinct flavor and aroma to it. Turmeric and Marigold Mixes – Ground saffron is sometimes mixed with turmeric to add bulk.

Low-Grade Saffron – White or yellow parts of the saffron thread (styles) mixed in to increase weight.

Artificial Flavoring – Threads sprayed with honey or sugar syrup to mimic saffron’s smell.

3. How to Identify Original Saffron

Experts use a combination of visual, taste, and chemical tests to determine authenticity. While not all of these can be done at home, there are several easy and effective methods you can try.

A.Visual Inspection

1. Type of Thread The genuine saffron threads have a trumpet-shaped end with a slightly wider, ragged top (stigma) that tapers into a thin base. Fake threads frequently lack natural shape variation and are perfectly straight.


2. Color

Genuine saffron is deep crimson red with occasional slight orange tips.

Due to the addition of dyes, fake saffron may appear excessively bright or have an unnatural glossy shine.


3. Presence of Yellow Part

Pure saffron contains only the red stigma; the yellow styles (flavorless parts) are removed in high-grade saffron. If there are a lot of yellow strands, the quality is low.


B. Water Test

1.Place a few strands of saffron in warm milk or water.

2.Wait for 10–15 minutes.


3.Real saffron retains its red thread structure while slowly releasing its golden yellow color over time.


4.Fake saffron releases color instantly, often staining the water deep red, and the threads may lose their color or dissolve completely (due to dyes).

C.Taste Test The aroma of genuine saffron has notes of hay and is earthy, sweet, and reminiscent of honey. Fake saffron may smell like synthetic chemicals, paint, or have little to no fragrance.

If the scent is strong and artificial, it has probably been sprayed with flavoring or perfume.


D.Taste Test

The flavor of real saffron is not sweet but rather slightly earthy and bitter. If your saffron tastes sweet, it probably has been coated in sugar syrup to make it weigh more and look better.


E.Test of Rub

1.Rub a saffron thread between your fingers with gentle pressure.


2.Real saffron will not break apart easily and will not leave a strong red stain immediately.


3.The color of the dyed fake saffron will show up immediately on your skin.


4.Advanced Scientific Testing While home tests are useful, laboratories can confirm authenticity with more precision:

Color strength is measured using the spectrophotometric test to identify synthetic dyes. Microscopic analysis focuses on Crocus sativus-specific cellular structure. The Chemical Solubility Test determines whether the color is produced by synthetic dyes or natural carotenoids. For commercial buyers or bulk purchases, professional lab testing is recommended.

5.Fake Saffron's Risks to Your Health Not only is fake saffron a waste of money, but it can also be harmful: Chemical dyes like Sudan Red can be harmful and may cause cancer. Allergies can occur to artificial additives. Fake goods may contain fungi or bacteria due to poor hygiene.


6.How to Purchase Genuine Saffron To increase your chances of getting genuine saffron, follow these guidelines: Choose brands or suppliers with quality certifications (ISO 3632 grading) when purchasing from reputable sellers. Look for Lab Testing Reports – Many reputable companies offer authenticity certificates.


Check the packaging: Saffron sold in loose form without branding is preferable to airtight containers with clear labels. Buy whole threads rather than powder because ground saffron is easier to falsify, so grind your own threads instead. Know the Origin – The best saffron comes from regions like Kashmir (India), Iran, and Spain.

7.Quality and Grading of Saffron ISO 3632 standards are used to grade saffron, taking into account color strength (crocin content), aroma (safranal content), and flavor (picrocrocin content). Grade I (the highest): Pure red stigmas with a strong aroma and flavor, high levels of crocin, and so on. Grade II: Slightly weaker in aroma and color. Grade III – Contains more yellow styles, lower potency.
